  • Scientific name: Salvia hispanica L. — an ancient cultivated seed from Mesoamerica, now used worldwide.
  • What it’s known for: Absorbs liquid and releases mucilage, forming a natural gel when soaked.
  • How it’s used: Stir into oats, yogurt, smoothies, salads, and baking; use soaked chia gel to thicken drinks and desserts.
  • Chia pudding: A common ratio is 2 tbsp chia : ½ cup milk, then rest/chill until thick.
  • Egg substitute (baking): Mix 1 tbsp chia + 3 tbsp water, rest 5–10 min to gel (1 “chia egg”).
