• Scientific Name: Berberis integerrima Bunge, commonly cultivated in Iran as the seedless cultivar ‘Bidaneh’. Dried Barberries are small dried fruits with naturally wrinkled surfaces, deep crimson to dark red colour and a light, slightly chewy texture.
• Also Known As: Zereshk, Zerešk, Persian Barberries, Iranian Barberries, Dried Barberry Fruit, Zereshk-e Poloee and Seedless Barberries.
• What It’s Known For: A traditional Persian culinary ingredient with a sharp, tangy, fruity and mildly citrus-like flavour. Dried Barberries are especially known for Zereshk Polo and are also used in pilaf, rice dishes, salads, sauces, stuffing, jams and baked preparations.
• How to Use: Sort and rinse the berries briefly under cool water, then drain thoroughly. Add directly to salads and baked recipes, or briefly sauté with butter or oil and a small amount of sugar before adding to rice, pilaf or savoury dishes.
