Scientific name: Hibiscus sabdariffa (A tropical shrub in the Malvaceae family, native to Africa and the Middle East).

What it’s known for: Its bold, "cranberry-like" tartness and its deep, jewel-toned crimson infusion. It is traditionally appreciated for its high concentration of natural plant pigments and its incredibly refreshing qualities in hot climates.

How to prepare: Steep 1–2 teaspoons of dried petals in hot water (95°C) for 5 minutes. For a refreshing "Aqua de Jamaica," brew a strong concentrate, sweeten to taste, and pour over plenty of ice with a squeeze of lime or a sprig of mint.
